Salt, then Jim Beam Bourbon BBQ sauce.

Salted enough that it dries the surface of the meat, then rub just a bit of the Jimmy Bean, which is;

2 cups Ketchup
1 cup brown sugar
3 tablespoons of Worstestershire
2 teaspoons dry mustard
1 cup Jimmy Bean Kentucky Straiht Bourbon Whiskey
4 tablespoons cider vinegar
4 tablespoons soy sauce (Kikoman, not that cheap Chinee stuff... Oh, wait...)
1/2 tablespoon ground cayenne pepper
Dash of liquid smoke

Throw ALL of this into a 2 at saucepan and bring to a boil, stirring and simmering uncovered until thick (*about 20min)

The steak will then be wet on the surface when you throw it on a searing grill preheated to 400F, adding meat drops the temp when covered to about 350F, 4min first side, flip, 4min second side, then flip 35 degrees for 2 min, flip again 35 degrees for another 2 and then off the heat, let rest for 5min, which will cool it to about 200F.

That first bite will turn a vegan into a meat Hunter. Trust me,
