I don't even bother cooking the brine...

I just use warm water from the tap and I use 1/2cup kosher salt & 1/2cup brown sugar per gallon and mix it well so it dissolves. It took 4 gallons to cover the bird this year. I brine the bird for my family's Thanksgiving and when I made the brine yesterday at my parents' house, I ended up pouring an old Blue Moon beer into the mix that had been in their garage fridge for who knows how long(neither of them drink beer). I also added a little bit of lemon pepper, a little bit of ground celery seed, a little bit of garlic powder and a little bit of onion powder. I don't know if the other added ingredients do much to the flavor, but the turkey we had today was one of the juiciest, most delicious we have had in a while...
