because you can get a perfectly done steak(to any doneness level you like) AND some char and burnt fat on a sous vide steak if you know what you are doing.

You can also do a perfect prime rib with a nice crust if after the sous vide bath, you rub it with course ground/cracked pepper and herbs and horseradish or whatever else and finish it off in the oven for a few minutes on a high temperature...

The one pictured was closer to rare(because that is how I like it). The people that ate that prime rib devoured it and were looking for more-a couple folks were fighting over the rib bones later(there was still plenty of meat on the ribs)....
