surprisingly from when I used to be a cook* in the early 2k's. knives are still going strong with the help of my whetstone. I just liked the way he's smashing that beef down flat with the heft of the cleaver, I wanna do that at home too

*by cook , I don't mean chef. I was in the big kitchen making all the dishes that the diner would portion and reheat in the main kitchen in front of customers. soup. lasagna, chile relleno cassaroles, pies, grilled veggies etc....
